Valentine’s Day Snack Mix









This is just the sweetest!! —truly it is—and also very delicious!

What a cute snack mix for the sweetest folks in your life!  A neighbor, the mail-carrier, the delivery driver, a bus driver, teachers... for friends and family too!


Here’s the recipe:

SWEET VALENTINE SNACK MIX

6 cups corn or rice Chex cereal 

4 cups Very Berry Cheerios

1 1/2 cup peanut butter

1 cup chocolate chips-milk or semi-sweet

3 cups confectioner’s sugar

Add Ins:

Dried cherries, cranberries or salted nuts

Candies: Valentine’s M &Ms or Candy hearts

Directions:

Measure the Chex cereal in a large bowl-set aside.

In a small saucepan over low heat melt the peanut butter and chocolate chips together. Pour the melted chocolate and peanut butter over the Chex cereal, gently stir to coat.  Once coated, add the confectioner’s sugar 1 cup at a time to coat.  Spread on a baking sheet and let cool.  

Once cooled, add the prepared Chex cereal to a large bowl or container, mix in the Very Berry Cherries, and any add-ins like candy, nuts or dried fruit. Stir.  

For gift-giving, portion into cellophane bags, tie with cute ribbons. Because this mix contains peanut butter, I always label the ingredients.

Chocolate Fudge Pie



 

How can I describe this old fashioned classic?? 


It’s part decadent chocolate, part comfort food, the kind of slice you’d expect grandma to make...somewhere between a cream pie and a brownie... like a fudge... yes, that’s it!!

A chocolate fudge pie. 

 (Sigh)... you’re too good to be true.



Such simple ingredients and such a fabulous dessert.  Isn’t it great when a few ingredients come together to make really delicious food.  Sometimes simple is best. Sometimes old fashioned is the way to go... 

This pretty pie could also become the perfect Valentine’s dessert... it’s easy to make, but I won’t tell...

Even better with ice cream... caramel sauce, or whipped cream... you can’t go wrong.

Yes, the recipe includes a homemade crust... it’s easy too— but if you want to buy a store-bought crust—it will still be delicious. —your secret is safe with me.

Rainbow Crunch Cookies

If you’re looking for a fun cookie to make with the kids... this is it!


Rainbow nonpareils or tiny sprinkles give these bright cookies their crunch! —very crunchy... and my kids thought these were fun.

Add pretty buttercream and you’ll have sandwich cookies perfect for Valentine’s Day gift-giving.  Who wouldn’t want one of these beauties??

I purchased my bag of rainbow nonpareils from Hobby Lobby in the baking aisle.  A large bag was about $8... and has lasted a looong time.  Other sources: Amazon, and local baking supply stores.
